What You Need
- 1 cup paella rice
- 200 g chicken pieces
- 200 g shrimp or mussels
- 1 tomato, grated
- 2 cups chicken stock
- A pinch of saffron
- Olive oil, garlic, and peas
How to Cook It
- Brown the chicken in olive oil, then add garlic and grated tomato.
- Stir in the rice so it is lightly coated.
- Pour in the saffron stock and spread the rice evenly.
- Add shrimp or mussels and peas, then simmer without much stirring.
- Cook until the rice is tender and lightly crisp at the bottom.

Gazpacho
Gazpacho is a cold tomato soup blended with vegetables, olive oil, and vinegar for a refreshing Spanish dish.
What You Need
- 6 ripe tomatoes
- 1 cucumber, peeled
- 1 red bell pepper
- 2 slices bread
- 2 tbsp olive oil
- 1 tbsp vinegar
- Salt and cold water if needed
How to Make It
- Roughly chop the tomatoes, cucumber, and bell pepper.
- Blend the vegetables with bread, olive oil, vinegar, and salt.
- Add a little cold water if the soup is too thick.
- Chill in the refrigerator until very cold.
- Serve cold with a drizzle of olive oil.

Spanish Omelette
Spanish Omelette, or tortilla, is a thick potato and egg dish cooked gently in a pan until soft and golden.
What You Need
- 4 potatoes, thinly sliced
- 1 onion, sliced
- 6 eggs
- Olive oil
- Salt
How to Cook It
- Cook the potatoes and onion gently in olive oil until soft, not crisp.
- Drain off most of the oil and let the mixture cool slightly.
- Beat the eggs with salt and mix them with the potatoes.
- Pour the mixture into a pan and cook until the base sets.
- Flip carefully or finish the other side gently until cooked through.
