Recipe 1
Ceviche
Ceviche is very fresh fish cured in lime juice with onion, chili, and herbs.
What You Need
- 300 g very fresh white fish, diced
- 1/2 cup lime juice
- 1 small red onion, thinly sliced
- 1 chili, finely chopped
- 2 tbsp chopped cilantro
- Salt and pepper
How to Make It
- Place the fish in a chilled bowl and season lightly.
- Pour the lime juice over the fish and toss gently.
- Add onion, chili, and cilantro and mix again.
- Refrigerate for 10 to 15 minutes until the fish turns opaque.
- Serve immediately while cold and fresh.
Recipe 2
Lomo Saltado
Lomo Saltado is a stir-fried beef dish with onion, tomato, soy sauce, and potatoes.
What You Need
- 400 g beef strips
- 1 red onion, sliced
- 2 tomatoes, sliced
- 2 tbsp soy sauce
- 1 tbsp vinegar
- Cooked fries or potatoes
- Cooked rice for serving
How to Cook It
- Cook the beef quickly in a very hot pan until browned.
- Add onion and tomato and stir-fry briefly.
- Season with soy sauce and vinegar.
- Fold in the fries or serve them alongside.
- Serve hot with rice.
Recipe 3
Aji de Gallina
Aji de Gallina is shredded chicken in a creamy yellow chili sauce often served with rice and potatoes.
What You Need
- 2 cups cooked shredded chicken
- 2 slices bread
- 1 cup milk
- 1 onion, chopped
- 2 tbsp yellow chili paste
- 1/4 cup ground nuts or cheese
- Salt and pepper
How to Cook It
- Soak the bread in milk until soft.
- Cook the onion until soft, then add the chili paste.
- Blend or mash the bread mixture and stir it into the pan.
- Add shredded chicken and ground nuts or cheese.
- Simmer until creamy and serve with rice or potatoes.
