  • 300 g very fresh white fish, diced
  • 1/2 cup lime juice
  • 1 small red onion, thinly sliced
  • 1 chili, finely chopped
  • 2 tbsp chopped cilantro
  • Salt and pepper
Instructions

How to Make It

  1. Place the fish in a chilled bowl and season lightly.
  2. Pour the lime juice over the fish and toss gently.
  3. Add onion, chili, and cilantro and mix again.
  4. Refrigerate for 10 to 15 minutes until the fish turns opaque.
  5. Serve immediately while cold and fresh.

Lomo Saltado

Lomo Saltado is a stir-fried beef dish with onion, tomato, soy sauce, and potatoes.

Ingredients

What You Need

  • 400 g beef strips
  • 1 red onion, sliced
  • 2 tomatoes, sliced
  • 2 tbsp soy sauce
  • 1 tbsp vinegar
  • Cooked fries or potatoes
  • Cooked rice for serving
Instructions

How to Cook It

  1. Cook the beef quickly in a very hot pan until browned.
  2. Add onion and tomato and stir-fry briefly.
  3. Season with soy sauce and vinegar.
  4. Fold in the fries or serve them alongside.
  5. Serve hot with rice.

Aji de Gallina

Aji de Gallina is shredded chicken in a creamy yellow chili sauce often served with rice and potatoes.

Ingredients

What You Need

  • 2 cups cooked shredded chicken
  • 2 slices bread
  • 1 cup milk
  • 1 onion, chopped
  • 2 tbsp yellow chili paste
  • 1/4 cup ground nuts or cheese
  • Salt and pepper
Instructions

How to Cook It

  1. Soak the bread in milk until soft.
  2. Cook the onion until soft, then add the chili paste.
  3. Blend or mash the bread mixture and stir it into the pan.
  4. Add shredded chicken and ground nuts or cheese.
  5. Simmer until creamy and serve with rice or potatoes.
