Jollof Rice

  • 1 1/2 cups long-grain rice
  • 1 cup blended tomato and red bell pepper
  • 1 onion, chopped
  • 2 cups stock
  • 1 tsp curry powder

  • 2 tbsp oil
Instructions

How to Cook It

  1. Heat the oil and saute the onion until softened.
  2. Add the tomato and pepper mixture, then cook it down until thick.
  3. Stir in the rice, stock, curry powder, and thyme.
  4. Cover and cook on low heat until the rice is tender and the liquid is absorbed.
  5. Fluff the rice gently before serving.

Egusi Soup

Egusi Soup is a thick melon seed stew often cooked with greens, meat, stock, and pepper.

Ingredients

What You Need

  • 1 cup ground egusi or melon seeds
  • 300 g beef or assorted meat
  • 1 small onion, chopped
  • 2 cups stock
  • 1 cup chopped spinach or bitter leaf
  • 2 tbsp palm oil
  • 1 blended pepper mix and salt

How to Cook It

  1. Cook the meat until tender and keep the stock.
  2. Heat palm oil and cook the onion with the pepper mixture for a few minutes.
  3. Stir in the ground egusi and mix until it thickens slightly.
  4. Add the stock and cooked meat, then simmer gently.
  5. Add the greens at the end and cook just until wilted.

Suya

Suya is skewered beef coated in a spicy peanut seasoning and grilled until charred.

Ingredients

What You Need

  • 500 g beef strips
  • 3 tbsp ground roasted peanuts
  • 1 tsp paprika
  • 1/2 tsp chili powder
  • 1/2 tsp ginger powder
  • 1 tbsp oil
  • Salt and skewers
Instructions

How to Cook It

  1. Mix the peanuts, paprika, chili powder, ginger, oil, and salt into a dry rub.
  2. Coat the beef well with the seasoning mixture.
  3. Thread the meat onto skewers.
  4. Grill or pan-sear until browned and cooked to your liking.
  5. Serve hot with onion slices and fresh tomato.
