  • 1 tsp paprika
  • 1 tsp coriander
  • 2 cloves garlic
  • Pita, lettuce, tomato, and garlic sauce
Instructions

How to Cook It

  1. Mix the yogurt, garlic, and spices, then coat the meat well.
  2. Marinate for about 30 minutes to build flavor.
  3. Cook the meat in a hot pan until browned and fully cooked.
  4. Warm the pita or flatbread.
  5. Fill with meat, lettuce, tomato, and garlic sauce, then wrap and serve.

Hummus

Hummus is a smooth chickpea dip blended with tahini, lemon juice, garlic, and olive oil.

What You Need

  • 2 cups cooked chickpeas
  • 3 tbsp tahini
  • 2 tbsp lemon juice
  • 1 clove garlic
  • 2 tbsp olive oil
  • Salt and cold water as needed

How to Make It

  1. Place chickpeas, tahini, lemon juice, garlic, olive oil, and salt in a blender or food processor.
  2. Blend until mostly smooth.
  3. Add a little cold water and keep blending until creamy.
  4. Taste and adjust the lemon or salt if needed.
  5. Serve with olive oil on top and warm pita on the side.

Tabbouleh is a bright herb salad with parsley, mint, tomato, bulgur, lemon, and olive oil.

Ingredients

What You Need

  • 1 bunch parsley, finely chopped
  • 2 tbsp fresh mint, chopped
  • 2 tomatoes, diced
  • 1/4 cup fine bulgur
  • 2 tbsp lemon juice
  • 2 tbsp olive oil
  • Salt and pepper

How to Make It

  1. Soak the bulgur in a little water until softened, then drain well.
  2. Combine parsley, mint, tomatoes, and bulgur in a bowl.
  3. Whisk lemon juice, olive oil, salt, and pepper together.
  4. Pour the dressing over the salad and toss gently.
  5. Serve chilled or at cool room temperature.
